Yummy Mascarpone Honey Icing: Tips for a Perfect Frosting

Okay, so, I wanted to try something new in the kitchen. I had some leftover mascarpone cheese, and I was like, what can I do with this? Then it hit me – icing! I’ve always been a fan of buttercream, you know, the usual butter and sugar combo. But I wanted to go a bit wilder this time. So, I decided to make a mascarpone honey icing.

First things first, I gathered all the stuff I needed. It wasn’t much, to be honest. Just four ingredients: that lonely mascarpone cheese sitting in my fridge, some softened unsalted butter (key word: softened), a bit of powdered sugar, and a drizzle of honey. Easy stuff that I always have around.

I started by tossing the butter into a big bowl. Using my electric mixer, I beat it until it was all light and fluffy, which took like, two minutes? Then, in went the mascarpone. I kept the mixer going, blending these two together until they were totally combined. You want to make sure the mix was smooth with no random chunks.

Mixing Time

  • Add the Sugar – I sprinkled in the powdered sugar, little by little. I kept the mixer on a low speed to avoid a sugar cloud explosion in my kitchen. Once it was all in and looking smooth, I cranked up the speed to medium and let it do its thing for another minute.

  • Honey, Honey – Last but not least, I drizzled in the honey. I mixed it on low again just until everything was nicely combined. You don’t want to overmix at this point, or the whole thing could turn a bit too runny, and nobody wants that, right?

And that was it! I mean, can you believe how simple that was? The whole thing took me, like, less than 10 minutes. I tasted a bit, and it was just what I was looking for. The mascarpone made it creamy but not too heavy, the butter gave it that richness, and the honey added this subtle sweetness that wasn’t overpowering. The icing looked smooth, and it was super easy to spread on top of the cupcake.

I used this icing on some cupcakes I baked, and boy, were they a hit! Everyone who tried them asked me for the recipe. It was a nice change from the usual buttercream, and I think it might be my new favorite. Definitely something I’ll be making again. I mean, if you have these ingredients lying around, you’ve got to try this out. It’s so easy, and it really takes your baked goods to a whole new level.
