Okay, so I wanted to try out some white food coloring for my baking project. I’ve seen a bunch of those fancy cakes and cookies online with super bright white frosting, and I was like, “I gotta get me some of that!”
First, I headed to my local grocery store, thinking they’d have it in the baking aisle. I looked through all the usual food coloring suspects, but no white. Asked one of the store guys, and he looked at me like I had two heads. “White food coloring? Never heard of it,” he said. Not very helpful, right?

Left there empty-handed and kinda bummed, but I wasn’t giving up. Figured I’d try my luck online. I jumped on my laptop and started searching. Lots of options popped up, which was a bit overwhelming, to be honest. There was liquid, gel, paste and even powder. And so many different brands like DecoPac, Chefmaster, ENCO, Ann Clark, Wilton and Americolor! The prices were all over the place, too. Some were just a couple of bucks, while others were way more expensive.
I ended up going with a gel food coloring from Americolor called “Bright White.” It seemed pretty popular among the cake decorating crowd. Plus, it said “Soft Gel Paste” on the bottle, which sounded kinda fancy. And it was only like 6 bucks for a small bottle, which is not too bad, I guess.
A few days later, my little bottle of white magic arrived. The first thing I did was try it out on some buttercream frosting. I just added a tiny bit of the gel, and holy moly, it made a huge difference! My regular off-white frosting turned into this beautiful, bright white. It was like night and day! I did another batch adding it more, and it was even whiter!
I also tried it with some royal icing, and it worked great there, too. I even experimented with adding it to cake batter, and it gave the cake a slightly whiter color, although it wasn’t as noticeable as with the frosting.
Here are some things I learned:
- Gel food coloring is super concentrated. A little goes a long way, so be careful not to add too much.
- It mixes really well with frosting and icing, but it might be trickier to use with other stuff.
- It can get a bit messy, so make sure you’re working on a surface that’s easy to clean. I had to scrub my countertop a bit after a little spill.
- You don’t need a lot of it, unless you want to, so even a small bottle will probably last a while.
Overall, I’m really happy I tried this white food coloring thing. It’s definitely a game-changer for getting that perfect white color in my baking. So next time you see those amazing cakes with the super white frosting, you’ll know their secret!
