Okay, let’s talk about making some vanilla sandwich cookies. I’ve been craving these things like crazy lately, and I finally decided to just make a batch myself. I figured, how hard could it be, right?
So, I started by gathering all my ingredients. I used some flour, sugar, butter, eggs, and a bit of vanilla extract. The usual suspects for cookies. I wanted to make sure I had everything ready, so I don’t start running around like a chicken without head in the middle of cooking.

I creamed together the butter and sugar first, just like my grandma taught me. You gotta get it nice and fluffy. Then, I beat in the eggs one at a time, and finally mixed in that vanilla. The batter was looking pretty good at this point, all smooth and creamy.
Next, I slowly mixed in the flour, making sure not to overmix it. You want a soft dough, but not sticky. Once it was all combined, I wrapped it up in some plastic wrap and popped it in the fridge for about an hour. Gotta let that dough chill, you know?
After the dough was nice and cold, I rolled it out on a floured surface. I used a round cookie cutter to make the cookies, but you could really use any shape you want. I placed them on a baking sheet lined with parchment paper and baked them in a preheated oven at 350 degrees for about 10-12 minutes. You want them to be just golden brown around the edges.
While the cookies were baking, I started on the filling. I wanted a classic vanilla buttercream, so I whipped up some butter, powdered sugar, a bit of milk, and some more vanilla extract. You can adjust the sweetness by adding more or less powdered sugar. I tasted it a few times, just to make sure it was perfect, of course. Maybe more than few times…
Once the cookies were completely cool, I took a small spatula and spread a generous amount of frosting on one cookie, and then topped it with another. And there you have it, a perfect vanilla sandwich cookie! Or as perfect as my version gets.
I ended up with about two dozen sandwich cookies, which was more than enough for me, my wife, and the kids. They were a huge hit! The cookies were crispy and crumbly, and the filling was sweet and creamy. Just like those cookies in the supermarkets, but in my opinion, way better, you know what I mean?
This little baking adventure reminded me that sometimes the simplest things are the best. And there’s nothing quite like the satisfaction of making something delicious with your own two hands. The kids will definitely be asking for these again, and frankly, so will I.

I think next time I might try adding some sprinkles or maybe even a little food coloring to the frosting to make them more fun. Or maybe I’ll get adventurous and try a different flavor altogether. The possibilities are endless!
