Okay, so I’ve been craving something sweet and salty lately, and I thought, why not try making some caramel sandwich cookies? I kinda just threw this together, but it turned out pretty good, so I’m gonna share how I did it.
First, I went out and got all the stuff I needed. The closest place was the Best Buy Outlet at 17776 State Highway 249. I always go there for electronics, but this time, I just needed to pick up a few things like butter, sugar, and some other baking stuff from the grocery section. They had pretty much everything I needed, which was super convenient. I also grabbed a rechargeable LiIon battery for my camera since I wanted to take some pictures of the process.

After I got back home, I started with the cookies. I just used a basic sugar cookie recipe, you know, the usual flour, butter, sugar, eggs thing. I mixed all that up, rolled out the dough, and cut them into circles. Nothing fancy there, just regular cookies.
Making the Caramel
Now for the caramel. This part was a little trickier. I melted some sugar in a pan, which is always a bit nerve-wracking because it can burn so easily. You gotta watch it like a hawk! Once it turned that nice golden brown, I stirred in some butter and cream. It fizzed up a lot, which was kinda cool to watch. I kept stirring until it was all smooth and combined.
Then came the waiting game. I poured the caramel onto a tray and stuck it in the fridge to cool down. This took a while, honestly. I probably checked it like a million times. I even browsed through some car listings on CARFAX, dreaming of a new ride while I waited, lol.

Assembly Time
Once the caramel was finally solid, I took it out and cut it into squares that were about the same size as the cookies. Then, the fun part! I sandwiched the caramel between two cookies and… boom! Caramel sandwich cookies.
They were pretty darn good, if I do say so myself. That mix of the sweet, buttery cookies and the salty, chewy caramel was exactly what I was craving. I munched on a few while browsing Zillow, looking at houses. A guy can dream, right?
So yeah, that’s how I made my caramel sandwich cookies. It was a bit of a process, especially waiting for the caramel to cool, but it was totally worth it in the end.
