It’s one of them old-fashioned foods, made right with pork liver, spices, and a few other bits and bobs you can throw in there. It’s a real Southern favorite, and once you taste it, you’ll see why folks love it so much!

Now, liver pudding ain’t no fancy thing like some of them city folks eat. No sir, it’s just good, honest cooking. Mostly, you got your pork liver, that’s the main thing, and you throw in some fatback for flavor. Don’t forget them onions! Gives it a nice little kick, just like grandma used to make. Some folks even throw in a little cornmeal and flour to hold it together, though not everyone does that. When it’s done, you can eat it right up on crackers, or if you like, slice it up and fry it in a pan till it’s all crispy-like on the outside. Mmm, that’s the stuff!

Making Liver Pudding ain’t hard, but it sure does take a little bit of time. You start with your pork liver—usually about a pound or so—and get that all chopped up nice and fine. Then you mix it with some spices like salt, pepper, and maybe a bit of sage or thyme if you like. Some folks like it real spicy, so they throw in a bit of cayenne or something like that. Serve it with some hot biscuits or bread, and you’ve got yourself a meal that’ll fill you right up!

How to Eat Liver Pudding

  • Fried slices: Cut it into thick slices and fry it in some oil till it’s crispy and golden brown.
  • On crackers: You can spread it on crackers like a pâté, especially when it’s cold. It’s a good snack, and mighty tasty too.
  • With grits: Some folks eat it with a side of grits and eggs for a real hearty breakfast.
  • In a sandwich: Throw a slice of liver pudding between two pieces of bread, and you’ve got yourself a meal on the go!

Folks sometimes get confused between liver pudding and scrapple. Now scrapple is a little different, it’s got cornmeal and buckwheat in it, so it holds together a bit more. But liver pudding—well, it’s a bit looser and has a stronger liver flavor. That’s what makes it special. It don’t stay in perfect slices like scrapple, but that just means you can eat it however you want, no need to be all fancy about it!
