So, the other day, I got this massive craving, right? For sandwich cookies. You know the ones, vanilla and chocolate, with that creamy stuff in the middle. Store-bought ones just don’t cut it sometimes, they taste kinda… flat. I figured, why not try making them myself? Seemed like a decent way to spend an afternoon, get my hands dirty.

Getting Started – The Dough Situation

First things first, I had to rummage through my pantry. Flour, sugar, butter, eggs – the usual suspects. Oh, and cocoa powder for the chocolate ones, vanilla extract for the, well, vanilla ones. Pretty basic stuff, really. I wasn’t about to get all fancy.

So, I started with the vanilla dough. Creamed the butter and sugar, then beat in the egg and vanilla. After that, I slowly mixed in the flour. It came together okay, a bit sticky, but manageable. I wrapped that up in some plastic wrap and chucked it in the fridge. Patience is key with cookie dough, I always tell myself that. Usually after I’ve already messed up a batch by being impatient.

Next up, the chocolate dough. Pretty much the same process, just added cocoa powder with the flour. This one smelled amazing right away. Dark and rich. Wrapped that one up too and into the fridge it went. My kitchen was already starting to look like a flour bomb went off. Standard baking procedure, I guess.

The Actual Baking Part

After what felt like forever (probably an hour, maybe a bit more), I pulled the doughs out. The vanilla dough was first. I floured my counter like crazy, ’cause I hate sticky dough. Rolled it out, not too thin, not too thick. Used a round cutter, nothing special. Lined them up on the baking sheet. Then did the same for the chocolate dough. It’s kinda satisfying, seeing all those little circles ready to go.

Popped them in the oven. I always get a bit nervous at this stage. Will they spread too much? Burn on the bottom? I kept peeking through the oven door. The smell, though! That’s the best part. House started smelling like a proper bakery. Pulled them out when they were just right, a little golden for the vanilla, and the chocolate ones just looked… done. You gotta trust your gut with chocolate cookies, hard to see them browning.

  • Cooling rack time. This is where the real test of patience begins. Can’t frost warm cookies. Disaster.

Creamy Filling Time & Putting It All Together

While the cookies were cooling – and man, did I want to just eat them plain – I whipped up the filling. Butter, powdered sugar, a splash of milk, and some more vanilla. Beat it until it was light and fluffy. I tasted it, you know, for quality control. Multiple times. It was good. Really good.

Then came the assembly line. Took a vanilla cookie, plopped a dollop of filling on it, topped it with another vanilla cookie. Bam. Sandwich. Did the same for the chocolate ones. And then, the ultimate move: vanilla bottom, chocolate top, or vice-versa. Why not, right? My kitchen, my rules. It got a bit messy, filling squishing out the sides, but that’s part of the fun. Or so I tell myself when I’m cleaning up later.

So, Were They Any Good?

Heck yeah, they were good! So much better than the store-bought ones. The cookies were crisp, the filling was sweet and creamy. Perfect with a glass of milk. I made a whole bunch. Some for me, some to share. Maybe. Okay, mostly for me.

It was a bit of work, sure. My kitchen looked like a disaster zone afterwards. Flour everywhere. Bowls piled high. But honestly, totally worth it. There’s just something about making things from scratch. You appreciate it more, I think. Plus, now I know I can whip up some decent sandwich cookies whenever that craving hits again. And it will. It always does.
