Okay, so I’ve been seeing these super cute birthday cheese cakes all over my feed, and I finally decided to give it a shot. I mean, who doesn’t love cheesecake? And making it myself? Challenge accepted!
Gathering the Troops (aka Ingredients)
First things first, I needed to get my ingredients together. Here’s what my counter looked like:

- For the Crust: Graham crackers (lots of them!), butter (melted, of course), and a bit of sugar.
- For the Filling: Cream cheese (the star of the show!), eggs, sugar, vanilla extract (because, yum!), and a little bit of heavy cream to make it extra smooth.
- For the Fun Part: Sprinkles! All the colors! And some cute birthday candles.
Making the Magic Happen
I started by smashing those graham crackers into crumbs. A rolling pin and a ziplock bag did the trick. I could smash it until find sand, then mixed the crumbs with the melted butter and sugar, and pressed that mixture into the bottom of my springform pan. Crust? Done!
Next up, the filling. I whipped the cream cheese until it was nice and fluffy. Then, I gradually added in the sugar, followed by the eggs, one at a time. Beating it all until smooth. Finally, I poured in the vanilla and heavy cream and gave it a final mix.
Time to get everything together! I poured the filling over the crust and smoothed out the top. Into the oven it went! I baked it at 350F (175C), my kitchen started smelling amazing.
The Finishing Touches
After baking, the hardest part – waiting for it to cool! Once it was chilled, I took it out of the pan and here comes the fun part! I went wild with the sprinkles, because, why not? And of course, I added the birthday candles.
And there you have it! My very own birthday cheese cake. It wasn’t perfect, the sides were a little uneven, but it tasted amazing, and I made it! That’s what counts, right? Totally doing this again!
