Okay, so it’s getting colder, and all I want to do is bake. I decided to dive into some “winter baking recipes” and wanted to share my whole messy, flour-covered journey with you guys.
Getting Started (and Making a Mess)
First, I searched for some ideas. You know, just browsing around to see what felt “wintery.” I ended up finding a few recipes that looked promising: a gingerbread cake, some cranberry-orange scones, and some seriously decadent-looking chocolate peppermint cookies.

Next, I gathered all my ingredients. This is where things started to get real. Flour? Check. Sugar? Check. Spices that I haven’t used in a year? Check. My kitchen counter already looked like a snowstorm had hit.
The Gingerbread Cake Adventure
I started with the gingerbread cake, because, well, gingerbread just screams “winter,” right? I mixed the dry ingredients, then whisked in the wet stuff. The batter smelled amazing – all warm and spicy. I poured it into a pan and popped it in the oven.
So far. While it was baking, I made the frosting. It was a simple cream cheese frosting, and I may or may not have “tasted” it a few too many times. Finally I get my Gingerbread Cake!
Scones and Spills
Next up: the cranberry-orange scones. I combined the flour, sugar, and baking powder, then cut in the cold butter. This part always feels like a workout. Then I stirred in the cranberries and orange zest, and gently mixed in the wet ingredients. The dough was pretty sticky, so I floured my hands (and the counter, and the floor…) before patting it out and cutting out the scones. Into the oven they went!
Chocolate Peppermint Perfection (Almost)
Last but not least, the chocolate peppermint cookies. I creamed together the butter and sugar, then added the eggs and vanilla. I mixed in the dry ingredients, including some cocoa powder that made everything look super chocolatey. Then, the fun part: I crushed up some candy canes and stirred them into the dough. I dropped spoonfuls of dough onto baking sheets and baked them until they were just set.
The Aftermath (and the Tasting!)
My kitchen was a disaster. Flour everywhere, dishes piled high, and a lingering smell of deliciousness. But it was all worth it.

- The cranberry-orange scones were crumbly and tart, with a nice citrusy kick.
- The chocolate peppermint cookies were rich, chewy, and totally addictive.
