Okay, so I decided to try my hand at making French sandwich cookies, and let me tell you, it was a journey! I’ve always loved those delicate, colorful cookies you see in fancy bakeries, so I figured, why not give it a shot?

First, I gathered all my ingredients. I’m talking about the basics: flour, sugar, butter, eggs, and some almond flour because I wanted that classic French flavor. I also got some food coloring, because, you know, gotta have those pretty colors!

I started by creaming together the butter and sugar. Now, this is key – you gotta make sure it’s super light and fluffy. This took a bit of elbow grease, but my trusty hand mixer did most of the work, lucky for me! Then I added in the eggs one at a time, mixing well after each addition. It started to look like a nice, smooth batter.

Next, I mixed in the dry ingredients – the flour, almond flour, and a pinch of salt. I did this gradually, making sure not to overmix. Overmixing is the enemy of tender cookies, and nobody wants tough cookies!

Now for the fun part! I divided the dough into a few different bowls and added a drop or two of food coloring to each one. I went for a pastel pink, a light blue, and a classic vanilla (no color needed there). I stirred each one until the color was evenly distributed.

The Baking Process

I preheated my oven and lined my baking sheets with parchment paper. Then, I scooped small spoonfuls of each colored dough onto the baking sheets, leaving some space between them. These cookies spread a bit, so you don’t want them to merge into one giant cookie!

Into the oven they went! I baked them for what felt like forever (but was really only about 10-12 minutes), keeping a close eye on them. You want the edges to be just barely golden brown.

Once they were out of the oven, I let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Patience is a virtue, especially when it comes to cookies!

The Filling and Assembly

  • Whip up a quick buttercream.
  • Add flavor and coloring.

Once I had the buttercream ready, it was time to assemble! I took one cookie, spread a generous amount of filling on the flat side, and then sandwiched it with another cookie. And repeat, repeat, repeat!

And there you have it! My very own, homemade French sandwich cookies. They might not have been perfect, but they were delicious, and I was pretty proud of myself. Plus, my kitchen smelled amazing for the rest of the day.
