Alright, folks, gather ’round! Today, I tried my hand at making some Oatmeal Cream Pie Bars, and let me tell you, it was a journey. I’ve got a bit of a sweet tooth, and these looked right up my alley.
So, I started by gathering all my stuff. First things first, I made sure I had plenty of butter. I mean, what’s a good baked treat without butter, right? I took it out of the fridge and let it get all soft and room-temperature-like. I find that really helps when you’re mixing it up later. This was for the oatmeal cookie part, which sounded pretty good on its own, honestly.

Mixing it up
Next up, I grabbed a big ol’ bowl and started mixing. I followed a recipe I found – can’t remember where, but it seemed legit. I tossed in the softened butter, some sugar, and a few other things. Honestly, it was pretty standard cookie dough stuff. I got in there with my mixer and let it do its thing until everything was nice and combined. Oh, and I used real butter, not that margarine stuff. Real butter makes a real difference, you know?

Baking time
After mixing, I pressed about half of this dough into a baking pan. I just used my hands and kind of smushed it in there. Then, into the oven it went. I kept an eye on it until it was all golden brown and delicious-looking. While that was baking, I whipped up the “cream” part of these bars. It was basically just a sweet, creamy mixture that smelled amazing. I may have snuck a taste or two… or three. Don’t judge!
Putting it all together
Once the first layer was baked, I took it out and let it cool down a bit. Then, I spread that creamy filling all over it. It was a bit messy, but hey, that’s half the fun, right? Finally, I crumbled the rest of that oatmeal cookie dough on top. Back into the oven it went for another round of baking. I just waited until the top was all golden and looked like it was ready to be devoured.
When they were finally done, I let them cool for what felt like forever. It was tough, I’m not gonna lie. The smell was driving me crazy! But it’s important to let them cool so they set up properly. After they were cool enough, I cut them into squares and finally got to try one. And let me tell you, they were pretty darn good. A little crumbly, a little messy, but totally worth the effort.
