Well, I gotta tell ya, I was makin’ a strawberry matcha cake the other day, and let me tell you, it was somethin’ else! Ingredients you’ll need:

- 2 eggs – fresh, if you can get ’em. I use the ones right from the henhouse.
- 1 teaspoon vanilla extract – just a lil’ bit of flavor to bring it all together.
- 1/2 cup milk – regular milk works fine, but if you got oat milk or almond milk, that’ll work too.
- 1/2 cup strawberry puree – now, you can use fresh strawberries or get the kind in a can. Either way, mash ’em up good!
- 1 teaspoon baking powder – to make sure the cake rises nice and fluffy.
Now, don’t get all stressed out, it ain’t that hard. First, you start by heatin’ up your oven to about 350°F, get that oven nice and warm. While that’s heatin’ up, you grab yourself a bowl and mix the butter with the sugar. I just use a regular spoon and stir ‘em together ‘til they look all creamy-like. Swirl it around a bit with a knife, you don’t wanna mix it all in, just give it a nice swirl so you can see those strawberry streaks. After that, pour the rest of the batter on top, coverin’ up the strawberries. Give it a little tap on the counter to make sure it’s even.
Now, pop it in the oven and bake it for about 25 to 30 minutes. You can tell it’s done when the top is nice and golden brown, and if you stick a toothpick in the middle, it comes out clean. Ain’t nothin’ worse than a soggy cake, so make sure it’s cooked all the way through.
Once it’s outta the oven, let it cool for a bit. You don’t wanna burn yourself. Then, when it’s cool enough, take it outta the pan and let it sit on a wire rack. I always like to dust mine with a lil’ bit of powdered sugar on top, makes it look real pretty. You could even add some fresh strawberries on top if you got ’em. Makes it look like somethin’ you’d find in one of them fancy bakeries.
Now, you might be wonderin’ about the taste: This cake’s got a real nice balance. The matcha gives it a smooth, earthy flavor, and the strawberries add a bit of sweetness and tartness.
