Miso gives it a real deep, earthy flavor, kind of like when you’re cookin’ with soy sauce, but with more of that rich umami taste. And sweet potatoes? Well, they add that natural sweetness that just balances it all out. The bread comes out soft and moist on the inside with a little bit of crunch from those seeds on top.

If you’ve got yourself some time, you can make this bread at home, and you don’t even need to be a fancy cook to get it right. It’s simple enough, even for a newbie in the kitchen. You just need a few ingredients, and you’re good to go. Here’s how I make it:

  • 1 medium sweet potato (about 1 cup mashed)
  • 1 tablespoon miso paste (you can use white or red, whichever you fancy)
  • 3 cups of all-purpose flour
  • 1/4 cup of seeds (like sesame or sunflower, if you got ’em)
  • 1 tablespoon of sugar
  • 1 teaspoon salt
  • 1/2 cup of warm water
  • 2 teaspoons active dry yeast
  • 2 tablespoons olive oil or butter

Now, the first thing you gotta do is roast that sweet potato. Peel it and chop it up into chunks, then throw it in the oven at about 400°F for around 30 minutes or so. You want it to be nice and soft, so you can mash it real good. Once that’s done, you mix that mashed sweet potato with the miso paste. I usually do it in a big ol’ bowl with my hands, but a spoon works just fine, too.

Next, you get your yeast and warm water goin’. Sprinkle the yeast into the warm water and add a pinch of sugar to feed it, then let it sit for about 5 minutes. After that, add it to the sweet potato and miso mixture, along with your flour, salt, and olive oil. Stir it all together until it forms a dough. If it’s too sticky, just sprinkle in a little more flour. Ain’t no shame in that.

Once it’s all mixed up, turn it out onto a clean counter and knead it for about 5-10 minutes, till it gets nice and smooth. If your dough’s too sticky, you can add a little flour, but don’t overdo it. After that, put it back in the bowl, cover it with a cloth, and let it rise for about an hour. You want it to double in size, so be patient, like waitin’ for your pie to cool down on a hot summer day.

After the dough has risen, punch it down, shape it into a loaf, and place it in a greased loaf pan. Sprinkle those seeds on top—sesame seeds, sunflower seeds, or whatever you have around. They’ll give it a nice crunch and a bit of flavor. Let it rise again for about 30 minutes, then bake it in the oven at 350°F for around 45 minutes to an hour. You know it’s done when it sounds hollow when you tap on the bottom.

When it’s out of the oven, let it cool for a bit before slicing. Now, I like it warm, but I tell you, even the next day, it’s still mighty fine. You can eat it just as it is, or maybe spread a little butter on it, or even dip it in some soup if that’s your style. Don’t matter what, you’ll enjoy it!
