Once it’s done, take it out of the oven and let it cool in the pan for a bit. Then you can turn it out onto a wire rack to cool completely. Or, if you’re like me, you can just slice off a piece while it’s still warm and slather it with butter. There ain’t nothin’ better than warm banana bread with butter, let me tell you.

Now, I heard tell of some folks puttin’ cream cheese in their banana bread. Swirlin’ it in, fancy-like. Sounds good, I guess, but I ain’t tried it myself. Maybe someday I will, but for now, I’m stickin’ to the classic. Classic is always good. You can use bakin’ soda instead of bakin’ powder, but you gotta use one or the other, otherwise the bread won’t rise up properly.
