Okay, here is my blog post about making a Princess Cake:
So, I decided to try and make a Princess Cake the other day. You know, that Swedish cake that’s all round and covered in green marzipan? I saw it online and thought, “Hey, I can do that!” Little did I know what I was getting myself into.

First off, I had to gather all the ingredients. And let me tell you, there were a lot! I made a special trip to the grocery store just for this cake. I got my eggs, flour, sugar, the usual suspects. But then there were some things I don’t normally bake with, like raspberry jam, heavy cream, and of course, the green marzipan. I wandered around the store for like an hour, trying to find everything.
Once I got home, I started with the sponge cake. I followed the recipe, mixed everything, and popped it into the oven. While it was baking, I made the pastry cream, which was surprisingly easy. It’s just milk, eggs, sugar, and cornstarch, cooked until it’s thick. Then I added in some vanilla extract. Easy peasy.
The cake came out of the oven, and I let it cool. While it was doing that, I whipped up some heavy cream until it was nice and fluffy. This part is important, don’t skimp on the whipping!
Assembling the cake
Now comes the fun part – assembling the cake. I cut the sponge cake into three layers. This was a little tricky, but I managed. On the bottom layer, I spread a nice, thick layer of raspberry jam. Then, I added a layer of that yummy pastry cream. I topped that with another layer of cake, then more pastry cream. Finally, I put the last layer of cake on top.

Next, I used the whipped cream to create a dome shape on top of the cake. This was harder than it looked, but I got it done. Then, the real challenge – the marzipan. I rolled it out, and tried to drape it over the cake, just like I saw in the pictures. It was a struggle, to say the least. I got some wrinkles and it was not perfectly smooth, but I finally got it on there.
I trimmed the excess marzipan, and added a little pink marzipan rose on top, just for decoration. I stood back and looked at my creation. It wasn’t perfect, but it was definitely a Princess Cake!
I have to say, it tasted pretty amazing, even if it didn’t look exactly like the ones I saw online. It was a lot of work, but it was worth it. I might even try it again sometime, now that I know what I’m doing. It was a real adventure, I learned a lot. If you’re thinking about making a Princess Cake, I say go for it! Just be prepared for a bit of a challenge, but trust me, the result is delicious.
