Today, I tried to make a parve cheesecake. Let me tell you, it wasn’t as easy as I thought it would be. But hey, that’s part of the fun, right?
So, I started by gathering all the ingredients. You know, the usual suspects: a non-dairy cream cheese substitute, some sugar, eggs, a bit of vanilla extract, and the stuff for the crust. I used some digestive biscuits and a bit of non-dairy margarine for that.

Mixing
- First things first, I crushed those biscuits into fine crumbs. It was a bit of a workout, but I got there. Then I melted the margarine and mixed it with the crumbs.
- That mixture went into the bottom of a springform pan, and I pressed it down firmly to make a nice, even crust.
Next up was the filling. I dumped the non-dairy cream cheese into a big bowl and beat it until it was smooth. Well, as smooth as it could be. This stuff wasn’t exactly like real cream cheese, but it would do.
Then, I added the sugar and mixed it in. After that, the eggs went in one by one. I made sure each egg was fully mixed in before adding the next. A splash of vanilla, a bit of mixing, and the filling was ready.
Baking
I poured the filling over the crust and popped the whole thing into the oven. The recipe said to bake it for about an hour, but I kept an eye on it. You never know with these things.
After about 50 minutes, it looked done. The top was golden brown, and the center was just a bit jiggly. Perfect. I turned off the oven and left the cheesecake in there to cool down slowly.
Cooling
Once it was cool enough, I took it out and let it cool completely on the counter. Then, into the fridge it went for a few hours to chill.
Results
Finally, the moment of truth. I sliced into the cheesecake, and it looked pretty good, if I do say so myself. The taste? Not bad. It wasn’t exactly like a regular cheesecake, but it was creamy and sweet. The crust was nice and crunchy, which added a good texture. I served it with some fresh strawberries.
All in all, it was a decent attempt at a parve cheesecake. Would I make it again? Probably. It was fun to try something new, and the result was tasty enough. Plus, now I can say I’ve done it. Maybe next time, I’ll experiment with some different flavors or toppings.
