Make AMAZING Drop Biscuits Using Pancake Mix (Easy Steps)

Okay, here’s my attempt at writing a blog post in the style you requested, about making drop biscuits with pancake mix:

So, the other day, I was craving biscuits. Like, really craving them. But I didn’t have any Bisquick, and honestly, making biscuits from scratch felt like… a lot. Then I remembered someone, somewhere, telling me you could use pancake mix. I figured, why not? It’s already got flour, leavening, and some fat in it, right?

My Experiment Begins!

I grabbed my trusty box of pancake mix – the just-add-water kind, because that’s what I had. I also got some milk (because I like my biscuits richer) and a little melted butter. Here’s how it all went down:

First, I dumped about two cups of the pancake mix into a bowl. I didn’t measure super precisely, because biscuits are forgiving, you know?

Then, I poured in some milk. I started with maybe half a cup and stirred it in with a fork. The goal was a dough that was shaggy and a little sticky, but not super wet. I added a splash more milk until it looked right.

Next, I drizzled in about two tablespoons of melted butter. This isn’t strictly necessary, but I wanted that buttery flavor. I mixed it in gently, just until it was incorporated.

I preheated my oven to 400 degrees Fahrenheit. I also grabbed a baking sheet and lined with parchment paper. (You should use the parchment paper for that you don’t need to clean up the baking sheet afterwards.)

Now for the fun part! I used a big spoon to scoop globs of the dough onto the baking sheet. They weren’t pretty, perfect rounds, but that’s the beauty of drop biscuits, right? They’re supposed to be rustic.

  • 2 cups of pancake mix.
  • 1/2 cup to 3/4 cup milk.
  • 2 tablespoons melted butter(optional).

I popped the baking sheet into the oven and baked them for about 12-15 minutes. I kept an eye on them, and they were done when they were golden brown on top.

And that’s it! I pulled them out of the oven, let them cool for a few minutes (the hardest part!), and then slathered them with butter and jam. They were surprisingly good! A little sweeter than regular biscuits, but definitely fluffy and satisfying.

So, if you’re ever in a biscuit emergency and only have pancake mix, don’t panic! It totally works. Just add liquid, maybe a little extra fat, and bake. You’ll have warm, comforting biscuits in no time.
