So, I decided to try and make those creme sandwich cookies, you know, the ones that are like Oreos but, well, homemade. I’d never made them before, thought it would be a fun little project. I grabbed a recipe from that internet, and let me tell you, it was a bit of a ride.

Gathering the Stuff
First, I had to get all the ingredients together. You know, the usual suspects: flour, sugar, butter, cocoa powder, baking soda, salt, eggs, vanilla extract, and for the filling, powdered sugar, more butter, and some milk. I swear, half the battle is just making sure you have everything before you start, it makes a big mess!
Mixing the Dough
I dumped all the dry ingredients for the cookies into a big bowl – flour, cocoa, sugar, baking soda, and salt. Gave it a good whisk to make sure everything was, like, evenly distributed. You don’t want pockets of baking soda, trust me. Then, in a separate bowl, I creamed together the butter and sugar until it was all fluffy. Cracked in the eggs, one at a time, mixing after each one. Poured in the vanilla. Finally, I gradually added the dry ingredients to the wet ingredients, mixing until it all came together into a nice, dark dough.

While the cookies were cooling, I made the creme filling. This was super easy. I just beat together the softened butter, powdered sugar, and a splash of milk until it was light and fluffy. You can add a little vanilla extract here too, if you want.
Assembly!
Finally, the fun part! I took one cookie, spread a generous amount of filling on it, and then sandwiched it with another cookie. Boom! Homemade creme sandwich cookies. I repeated and repeated and repeated, until I used up the cookies and filling.
The Verdict
Were they perfect? Well, not really.

Some were a little uneven, the filling squished out the sides on a few, but, the cookies were a great experience for me.
