Now, don’t get all confused by the fancy name, it’s just food coloring that’s made to mix better with fats and oils instead of water. And let me tell ya, this here stuff is mighty handy when you’re workin’ with things like chocolate or buttercream.

How to Use Oil-Based Food Coloring for Perfectly Colored Chocolate and Frosting

See, water-based food colorin’ works great for things like regular cake batters or frostings, but when it comes to things like chocolate or some of them rich buttercreams, you need somethin’ that’ll stick better. That’s where oil-based food colorin’ comes in. This colorin’ is made specially to mix right in with fats, so when you’re meltin’ chocolate or stirrin’ up some Swiss meringue buttercream, it’ll give ya them bright, bold colors without making a mess. You won’t be seein’ streaks or weird patches like you might with regular food colorin’ that’s water-based.

Now, let’s talk about how to use it. Say you’re makin’ a nice batch of chocolate for some candy. You just gotta pick up some of that oil-based food coloring, and add it right into your melted chocolate. You don’t need much, just a little drop goes a long way. Mix it in real good, and you’ll see that beautiful color take hold. If you’re workin’ with buttercream or icing, it’s the same thing. You just add a few drops, and mix it all in, and you’ll get that perfect shade without any of that thin, watery lookin’ color that can happen with the other types.

Gels tend to work a little better in frostings since they won’t thin out too much, while liquids are good for chocolate and other candy-type treats where you need that smoother blendin’ action.

There’s a lotta brands out there sellin’ these oil-based colorings, and you can get ‘em in all sorts of colors. You’ve got your basics like red, yellow, and blue, but you can also find ones like blush, lavender, and even white if you’re makin’ somethin’ real special. One good brand I’ve heard folks talk about is Color Mill, they got a whole set of 6 colors, and they mix real nice into whatever you’re bakin’ up.

When you’re usin’ these oil-based colors, remember that you don’t need a whole lot. A little bit goes a long way. If you’re workin’ with smaller batches, you might only need a drop or two, but if you’ve got a big ol’ batch of somethin’, you can add a bit more until you get that perfect shade. It’s all about playin’ around with it, seein’ how much color you need to get that look you’re goin’ for.
