How to Use Grain Craft High Gluten Flour: Tips and Tricks for Bakers

Okay, so I’ve been messing around with this Grain Craft high gluten flour lately, and let me tell you, it’s been quite a ride. I grabbed it because I wanted to step up my bagel and pizza game, you know?

First thing I did was whip up a batch of sourdough bagels. I used my usual recipe, but swapped in this high gluten flour. The dough felt different right from the start, way more elastic. Mixing it was a bit of a workout, to be honest. My mixer was chugging along, and I was sweating. But I powered through. This thing is tough. It really need to mix for a long time.

After that, I let it rise. I think that gluten development is really important. This is a key step. It rose just like my usual dough, maybe a bit faster.

Then, I shaped the bagels. They held their shape beautifully, no spreading out like before. When I boiled them, they puffed up nicely and didn’t lose their shape, I felt like a pro.

Baking them was the real test. They came out of the oven with that perfect chewy texture I was looking for. I mean, that’s what I want! The crust was golden brown, and the inside was, like, the definition of a bagel. I was pretty proud.

Next up, I tried it with pizza dough. I used a recipe I found online, and it turned out great. It was easy to stretch the dough super thin without tearing. I made two pizzas, one with a thin crust and one with a thicker crust.

  • The thin crust one was crispy and held up well to the toppings.
  • The thicker crust one was chewy and had a nice rise to it.

Both were delicious, but I think the high gluten flour really shined in the thin crust.

So, from what I can tell, this Grain Craft high gluten flour is the real deal if you’re into making things like bagels and pizza. Just be prepared to put in some work when mixing and know that recipes might need some tweaking. But it’s worth it, at least in my book.

I think I’ll keep experimenting with this flour. Maybe try some different recipes, see what else I can come up with. Who knows, maybe I’ll stumble upon something amazing. That’s the fun of baking, right?
