Okay, so I’ve been craving biscuits lately, but I didn’t have any biscuit mix. I did, however, have a big box of pancake mix. I figured, “Why not?” and decided to try making drop biscuits using pancake mix. It’s a bit of an experiment, but hey, that’s half the fun, right?
Getting Started
First, I grabbed my trusty mixing bowl and dumped in about two cups of the pancake mix. Honestly, I didn’t measure it super precisely. It’s pancake mix, not rocket science. Then, I added a bit of sugar – maybe a tablespoon or two. Again, just eyeballing it.

Mixing it Up
Next, I needed some fat. I had some butter in the fridge, so I cut off a chunk – probably about 1/3 of a cup – and tossed it into the bowl. Then, I used my fingers to kind of squish the butter into the pancake mix until it looked like coarse crumbs. You could use a pastry cutter, but where is fun in that? using my hand is better.
I poured in some milk. Start with maybe half a cup, and then add more until the dough just comes together. It should be pretty shaggy and sticky, not smooth like pancake batter.
Time to Bake
I preheated my oven to 400 degrees Fahrenheit. No need to grease the baking sheet, just dropped spoonfuls of the dough onto it. They don’t have to be perfect – that’s the “drop” part of drop biscuits.
- Two cups of the pancake mix.
- One or two tablespoon sugar.
- 1/3 of a cup butter.
- Half a cup milk.
I baked them for about 12-15 minutes, until they were golden brown on top. You might need to adjust the time depending on your oven.
The Result
They came out pretty good! They were definitely softer and fluffier than regular biscuits, but they still had that nice, slightly sweet flavor. I slathered one with butter and jam, and it was delicious. A total win for a lazy baker!
