How to Make Delicious Mexican Fruit Cake: A Step-by-Step Guide

Well, folks, today I’m gonna tell y’all how to make a Mexican fruit cake. Ain’t nothin’ too fancy, but it’s real tasty. This cake is a mix of fruits and nuts that’ll make your mouth water. Let’s get right into it, step by step. First off, you’ll need a big ol’ bowl to mix everything up. I use a 9×13 inch pan to bake it in, so make sure to grease it up good with butter or use that non-stick spray if you’ve got it. You don’t wanna be scrapin’ the cake out of the pan later!

How to Make Delicious Mexican Fruit Cake: A Step-by-Step Guide

Now, for the ingredients. You’ll need some candied fruits, raisins, and pecans, just to name a few. You can also throw in some walnuts if you like. In a big ol’ bowl, mix those up. Get ’em all nice and spread out. You want the fruits and nuts to be even throughout the cake, so don’t rush this part.

Next, you’ll need some butter, eggs, and sugar. Mix ’em all together until it gets nice and smooth, then go ahead and add in the flour. Make sure to sift it, so the cake don’t come out all lumpy. Add a little salt to balance out the sweetness, and throw in a bit of baking soda so the cake rises good.

Once you got all that mixed together, you’ll want to stir in your fruit and nut mixture. Get it all combined, and then pour it into the greased pan. Now, stick that pan in the oven and set your heat to 350 degrees. You’ll bake it for about 40 minutes. If you’ve got a toothpick or fork, poke it in the middle of the cake to see if it comes out clean. If it does, it’s done. If not, give it a little more time, just don’t let it burn!

When the cake’s done bakin’, take it out and let it cool. While it’s coolin’, we’re gonna whip up the icing. This part’s easy. You just need cream cheese, butter, powdered sugar, and a bit of vanilla. Beat ’em all together until it’s smooth like butter. Once your cake’s cool enough, spread that icing over the top. Don’t be shy with it, just go ahead and cover it good!

Now, you’re ready to serve. You can slice it up nice and neat or just tear into it. This Mexican fruit cake is perfect for holidays or any ol’ time you feel like a treat. It’s sweet, it’s fruity, and it’ll surely fill up your belly!
