Today, I felt like baking something sweet and tangy, so I decided to make a honey and lemon cake. I’d been seeing a lot of buzz about using honey in baking lately, especially after I saw something about a Honey Bees campaign. Plus, I had a bunch of lemons lying around that I needed to use up. Let me tell you, this was a fun little adventure in my kitchen!
First things first, I preheated my oven to 350 degrees Fahrenheit. While the oven was doing its thing, I grabbed a 9-inch square baking pan and gave it a good spray with some baking spray. To make sure nothing would stick, I also lined the bottom of the pan with parchment paper and sprayed it again. Better safe than sorry, right?

Next, I got all my ingredients together. I’m not gonna lie, I was pretty excited to use honey in a cake. I whisked together the dry ingredients in one bowl. In another bowl, I creamed together the butter and sugar until it was all light and fluffy. This took a bit of elbow grease, but it was worth it. Then, I added the eggs one at a time, mixing well after each addition. After that, I poured in the honey and lemon juice, and zested in some lemon rind for that extra zing.
Once everything was nicely combined, I gradually added the dry ingredients to the wet ingredients, mixing until just combined. You don’t want to overmix it, or the cake will be tough. I poured the batter into the prepared pan and popped it into the oven.

Now, while the cake was baking, I whipped up a simple lemon glaze. All I did was mix together some powdered sugar, lemon juice, and a touch of honey. Easy peasy, lemon squeezy!

After about 30-35 minutes, I checked the cake by inserting a toothpick into the center. It came out clean, so I knew it was done. I let the cake cool in the pan for about 10 minutes before I flipped it out onto a wire rack to cool completely. This part always makes me a little nervous, but it turned out just fine.

Once the cake was completely cool, I drizzled the lemon glaze all over the top. It looked so pretty, if I do say so myself. I couldn’t wait to cut into it!
Finally, the moment of truth. I sliced into the cake, and it was perfectly moist and tender. The combination of honey and lemon was just divine. It was sweet, tangy, and just the right amount of richness. I enjoyed a slice with a cup of tea, and it was the perfect afternoon treat.
