Alright, let’s talk about this gluten free honey oat bread. I ain’t no fancy baker, mind you, just a plain ol’ woman who likes to eat good. And this bread, well, it’s good for ya, especially if that gluten stuff bothers your belly. My neighbor, bless her heart, she can’t eat nothin’ with gluten. Always complainin’ about her stomach. So, I figured, why not try makin’ somethin’ she can eat too?
Now, I hear tell that oats, they don’t got much of that gluten in ’em. But apparently, just usin’ oats ain’t enough to make a good bread. Some science-y folks say it’s got somethin’ called “beta-glucan” and that makes it tricky to get the bread to rise up all nice and fluffy. Well, I ain’t got no time for fancy science. I just want bread that tastes good and don’t fall apart in my hands.
First thing’s first, you gotta get yourself some gluten free oats. Not just any oats, mind you, gotta make sure they’re labeled “gluten free.” Can’t be too careful these days. Then, you need some honey. I like the real stuff, from the bees, not that corn syrup mess. Honey makes the bread a little sweet, you know, like a treat.
Ingredients for the bread:
- 3 cups gluten-free oat flour (you can make this by grinding up those gluten-free oats in a blender)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup honey
- 1 3/4 cups milk (I use almond milk, but you can use whatever you like)
- 2 tablespoons apple cider vinegar
- 2 eggs
Mix the dry stuff together first, that’s the oat flour, bakin’ soda, and salt. Just dump it in a big bowl and stir it around with a spoon. Nothin’ fancy. Then, in another bowl, mix up the wet stuff: the honey, milk, vinegar, and eggs. Whisk it good, till it’s all mixed up proper.

Now, pour the wet stuff into the dry stuff and stir it all together. Don’t overmix it, though. Just stir it enough so there ain’t no dry flour left. The batter will be kinda thick, not like regular bread dough.
Grease up a loaf pan. I just use some butter, works just fine. Pour the batter into the pan and smooth it out with a spoon. Then, pop it in the oven. I bake it at 350 degrees for about 45-50 minutes. You’ll know it’s done when you stick a toothpick in the middle and it comes out clean.
Let it cool down in the pan for a bit before you try to take it out. Otherwise, it might fall apart. And nobody wants crumbly bread, right? Once it’s cooled, slice it up and eat it. It’s good with butter, jam, or even just plain. It ain’t exactly like regular bread, mind you. It’s a little denser, a little chewier, but it’s got a good flavor, that honey and oats, they go together real nice.
And the best part is, it don’t bother my neighbor’s stomach. She loves it! Says it’s the best gluten free bread she’s ever had. Now, I ain’t gonna brag, but that makes me feel pretty good. Just a plain ol’ woman, makin’ bread that folks can enjoy. That’s all there is to it.
