So, I’ve been on this baking kick lately, trying out all sorts of new recipes. And let me tell you, these duplex sandwich cookies? Total game changer. I mean, who doesn’t love a good sandwich cookie? But two different cookies in one? Mind blown. Here is how I did it.

Getting Started
First things first, I grabbed my ingredients. I decided to go with a classic combo: chocolate and vanilla. You’ll need your basic cookie stuff:
- Flour
- Sugar
- Butter (make sure it’s softened!)
- Eggs
- Vanilla extract
- Baking soda
- salt
And then, for the chocolate part, I got some cocoa powder. You will need that too.
Making the Dough
I started by creaming together the butter and sugar. I just tossed them in my stand mixer and let it do its thing until it was all light and fluffy. Then, I cracked in the eggs, one at a time, mixing after each one. And a splash of vanilla, of course! Dont’t forget to add the vanilla.
In a separate bowl, I whisked together the dry stuff: flour, baking soda, and a pinch of salt. Then, I gradually added that to the wet ingredients, mixing until it was just combined. Be careful not to overmix!
Now for the fun part. I split the dough in half. In one half, I mixed in the cocoa powder until it was nice and chocolatey. Make sure to do this step, or it won’t be chocolate duh.
Shaping the Cookies
This is where it gets a little tricky, but it’s also what makes these cookies so cool. I rolled out both the vanilla and chocolate doughs into thin rectangles. Then, I carefully placed one on top of the other.I roll the two dough together.
Next step is using a cookie cutter, I cut out the cookies. I went with circles, but you could use any shape you want!

Baking Time
I popped them in the oven, which I had preheated, bake them until the edges were golden brown. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
The Filling
While the cookies were cooling, I made a simple vanilla buttercream. You can use store-bought frosting if you’re short on time, I mixed the vanilla buttercream until it was smooth.
Putting It All Together
Finally, the moment of truth! I spread a generous layer of buttercream on one cookie and topped it with another. And there you have it: duplex sandwich cookies! These are easy to put toghter.
These cookies were a huge hit. They looked so impressive, and the combination of chocolate and vanilla was perfect. I’ll definitely be making these again!
