Okay, so, I’ve been on this chili kick lately. You know, the kind where you just want to make a big ol’ pot and eat it all week long? Well, I did that. And let me tell you, by day three, I was starting to think about what else I could eat with it.
I mean, chili’s great and all, but you gotta have something to break up the, uh, monotony, right? That’s where the sweet stuff comes in. I started thinking, “What’s a good dessert to go with chili?”

First, I raided my pantry. I found some cornbread mix and whipped that up. Added a little honey butter on top. Not bad, not bad at all. It was a classic choice, and it worked. But I wanted to experiment more.
Then, I remembered seeing something about apple strudel online, dug it up in my memory, because why not? Fall’s coming up, so apples are on my mind. Made a quick version—didn’t have all day, you know. The sweetness of the apples really cut through the spiciness of the chili. I think this is one of the classic pairings for fall, I will definetely try it next fall.
Next up, ice cream! Yeah, I know, sounds weird, but hear me out. I took a scoop of vanilla, put it in a bowl, and ladled some chili right over it. Okay, I admit, it was more like chili with a side of ice cream, but still! The cold, creamy ice cream was a really nice contrast to the hot, spicy chili. You gotta try this trick sometimes.
And because I was on a roll, I decided to go all out. Chocolate lava cake. I grabbed a box mix from the store (no shame in my game) and baked those babies up. Ooh boy, was that good. The rich, dark chocolate was the perfect way to end a chili meal. It was like, the ultimate comfort food combo.

I still want to try pumpkin bars next time I make chili, which is probably going to be next week, I still have a lot in my fridge, haha. I feel like the spices in the pumpkin bars would go really well with the chili. I’ll let you know how that goes!
