So, today I was in the mood for something sweet, but I didn’t want to spend hours in the kitchen. I remembered this recipe I saw a while back for cookies made with soda crackers, and I thought, “Why not give it a shot?” Let me tell you, it was way easier than I expected, and the results were pretty darn good.
First, I grabbed a box of soda crackers from the pantry. I mean, who doesn’t have a box of these lying around? Then, I took out some butter, brown sugar, and chocolate chips – you know, the usual cookie suspects. I preheated the oven to 350°F (175°C) because that’s what the recipe said to do.
Next, I lined a baking sheet with parchment paper. This is important, folks, because you don’t want these cookies sticking to the pan. Trust me on this one. Then I arranged the soda crackers in a single layer on the baking sheet. It was kind of like putting together a puzzle, but with crackers.

In a saucepan, I melted the butter and brown sugar together. I stirred it until it was all bubbly and smooth. This is where the magic starts, people. This caramel mixture is what’s going to give these cookies that amazing toffee flavor.
Once the caramel was ready, I poured it evenly over the crackers. Then, I popped the whole thing in the oven for about 5 minutes. You want the caramel to be nice and bubbly, but not burnt. Keep an eye on it, okay?
After 5 minutes, I took the baking sheet out of the oven and sprinkled chocolate chips all over the top. The heat from the caramel melted the chocolate chips, and I spread it around with a spatula to make a nice, even layer of chocolatey goodness. I should have taken pictures of this process, but I was too busy focusing on my cookie adventure.
Then, I just let the whole thing cool down completely. This was the hardest part, to be honest. I wanted to dive right in, but I knew I had to wait. Patience is a virtue, especially when it comes to cookies.

Once they were cooled, I broke them apart into individual cookies. They looked so tempting, all crispy and golden brown, with that shiny layer of chocolate on top. And let me tell you, they tasted even better than they looked. They were crunchy, toffee-like, and chocolatey all at the same time. I never thought that a soda cracker would bring me this level of joy. It was a party in my mouth, and everyone was invited.
