Alright, so the other day I got this massive craving for something sweet, and not just any sweet – I wanted that perfect combo of chocolate and peanut butter. I’ve always been a fan of those flavors together. So, I decided to make some chocolate peanut butter sandwich cookies.
First, I gathered all the ingredients. For the cookies, I needed flour, cocoa powder, baking soda, salt, butter, sugar, brown sugar, an egg, and vanilla extract. For the peanut butter filling, I grabbed some peanut butter (creamy, of course), powdered sugar, more butter, and a little bit of milk.

I started by preheating the oven to 350°F. Then, I lined a couple of baking sheets with parchment paper. In a medium bowl, I whisked together the flour, cocoa powder, baking soda, and salt. In a separate, larger bowl, I creamed together the butter, sugar, and brown sugar until it was all light and fluffy. Next, I beat in the egg and vanilla.
Gradually, I added the dry ingredients to the wet ingredients, mixing until it was just combined. I didn’t want to overmix it. Then, I scooped rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each one.
I baked the cookies for about 10-12 minutes. They came out looking perfect – slightly soft in the center. I let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
While the cookies were cooling, I made the peanut butter filling. I simply beat together the peanut butter, powdered sugar, and butter until it was smooth. Then, I added a splash of milk to get the right consistency – not too thick, not too runny.
Once the cookies were completely cool, I spread a generous amount of the peanut butter filling onto the flat side of one cookie and topped it with another cookie to make a sandwich. I repeated this with all the cookies.

The Result
I ended up with a big batch of these delicious cookies. I shared some with my family, and they were a huge hit! They were so good, that I might have had a few too many myself. I’ll definitely be making these again soon. Maybe next time I’ll even try adding some chocolate chips to the cookie dough for an extra chocolate kick. Yum!
