Hey everyone, today I tried making some strawberry sandwich cookies, and let me tell you, it was quite the adventure! I started by gathering all my ingredients.
First, I creamed together some butter and sugar until it was all light and fluffy. I always find this part kind of satisfying, watching it all come together.

Then, I mixed in the dry ingredients.

I added some flour and a bit of salt, mixing until just combined. You don’t want to overmix it, or the cookies will be tough.
After that, I rolled out the dough on a floured surface. This part was a bit tricky because the dough was a little sticky, but I managed. I used a round cookie cutter to cut out the shapes. I tried to be careful not to make them too thin or too thick.
I placed the cookies on a baking sheet and popped them in the oven. I baked them for about 10-12 minutes until the edges were golden brown. They smelled amazing while they were baking!
Making the filling

While the cookies were cooling, I started on the strawberry filling.

I whipped up some cream cheese, powdered sugar, and a bit of vanilla extract until it was smooth.

Then, I mixed in some strawberry preserves. I had to taste test a few times, just to make sure it was perfect, of course!
Once the cookies were completely cool, I spread the strawberry filling on one cookie and topped it with another to make a sandwich. It was a bit messy, but that’s part of the fun, right?
Finally, I arranged the finished cookies on a plate. They looked so pretty and tasted even better! They were sweet, a little tangy, and just the right amount of buttery. Definitely a success in my book. If you’re looking for a fun baking project, give these a try!
