Yesterday, I tried making a sourdough chocolate cake. The recipe is from King Arthur, and I had heard a lot about it. So I thought, why not give it a shot?
First, I gathered all the ingredients. Everything was just normal stuff from my pantry. I took out some sourdough starter, flour, sugar, cocoa powder, eggs, and so on. Nothing too fancy.

I started by mixing the dry ingredients in one bowl – you know, the usual flour, sugar, cocoa, and a bit of salt. Then, in another bowl, I combined the wet stuff. That was mostly my sourdough starter, a couple of eggs, some oil, and, surprisingly, mayonnaise. Yeah, mayonnaise in a cake! I know it sounds weird, but someone told me that it is just oil and egg yolks whipped together. So I guess it makes sense since this stuff can make the cake super moist.
After that, I slowly added the dry ingredients to the wet ones. Stirred them all together until it was just combined. No overmixing, just like they always say. Then, I poured the whole thing into a greased cake pan.
I baked it for about 30 minutes. The kitchen smelled amazing, by the way. When the timer buzzed, I checked with a toothpick, and it came out clean. That’s how I knew it was done. I let it cool for a bit before I even thought about frosting.
- For the frosting, I just whipped up some butter, powdered sugar, cocoa, and a splash of milk. Nothing too complicated.
- Once the cake was cool, I slathered that frosting all over it.
The Frosting Part
Finally, the moment of truth! I cut a slice, and man, it was good. Really moist, rich, and chocolatey. That hint of sourdough gave it a unique taste. I was pretty proud of myself, not gonna lie. My family loved it too, which is always a good sign.
Overall, it was a fun baking experiment. I always like trying new recipes, and this one’s a keeper. If you’re into baking and have some sourdough starter lying around, you should definitely try this one out. Just a heads-up, though: that mayonnaise part might sound strange, but trust me, it works!
