Okay, today I wanted to try making a golden fruit cake. I’ve seen this kind of cake at some stores before, and it looks really tasty, so I figured, why not give it a shot at home? I did a bit of searching online for some basic tips and recipes, nothing too complicated, just enough to get me started.
First things first, I preheated my oven to 150°C. While it’s heating up, I prepared the cake pan. I took an 8-inch round cake pan and lined it with not one, not two, but three layers of baking paper! I guess this makes sure the cake doesn’t stick, and maybe helps it bake evenly. I also found some advice about using yogurt to make the cake moist, I used sour cream instead because I like it better.

Then came the fun part – mixing the ingredients. I got some high-quality flour, fresh eggs, real butter (not the fake stuff!), and some good vanilla extract. For the sugar, I used fine sugar because that’s what I had on hand. I also grabbed some dried fruits that I’d previously soaked in sherry and orange juice. I remembered reading somewhere that soaking them makes the cake even better. And I put them into the microwave and heat it up, oh it smells good!
Mixing and Baking
- Mixed all the dry ingredients together in one bowl.
- Creamed the butter and sugar in another bowl until it was all fluffy and light.
- Added the eggs one at a time, mixing well after each one.
- Slowly added the dry ingredients to the wet ingredients, mixing until just combined. Oh, I also threw in some cinnamon at this point because why not?
- Finally, I folded in the soaked fruits.
After everything was mixed, I poured the batter into the prepared cake pan and smoothed the top. It went into the oven for about an hour. I used a long stick to check the cake, which means it was done! I took it out and let it cool in the pan for a while before transferring it to a wire rack to cool completely.
The cake came out looking pretty good, golden and all. It smelled amazing, especially with that hint of cinnamon and the soaked fruits. I cut myself a slice, and it was delicious! Moist, flavorful, and just the right amount of sweetness. Definitely a win in my book. I’ll probably make this again, maybe next time I’ll experiment with adding some nuts or different spices. Baking is pretty fun when you get the hang of it!
