Okay, so yesterday I decided to make some cupcakes. I’ve seen those “Bake My Day” places around, and thought, “Why not bake my own day, eh?” So that’s what I did.
Getting Started
First, I dug out my old recipe book – the one with all the handwritten notes and splatters. I found a basic vanilla cupcake recipe and decided to roll with that. It’s a classic for a reason, right?

Gathering the Goods
Next up, I checked my pantry. Flour? Check. Sugar? Check. Eggs? Uh oh, only two left. I really didn’t want to run to the shop, I was already in the baking mood. I hoped that two is good enough, and made a mental note to get more eggs soon.

- Sugar
- Butter (plenty!)
- Vanilla extract (almost empty, another note!)
- Baking powder
- Two eggs
Mixing it Up
I grabbed my biggest mixing bowl and started creaming together the butter and sugar. My hand mixer is ancient, but it still gets the job done! Then, I cracked in the eggs, one at a time, added the vanilla, and slowly incorporated the dry ingredients.I made sure everything is well mixed.
Into the Oven
I preheated the oven – 350 degrees Fahrenheit, as usual. While that was warming up, I lined my cupcake tin with those cute little paper cups. Then I scooped the batter in, filling each one about two-thirds full. I always get a little nervous at this stage, hoping they rise properly!
The Waiting Game
Into the oven they went! The recipe said 18-20 minutes, but I always start checking around 15. My oven can be a bit temperamental, and nobody wants burnt cupcakes.
Frosting Frenzy
While the cupcakes baked, I whipped up some simple buttercream frosting. Nothing fancy, just butter, powdered sugar, a splash of milk, and a bit of vanilla. I’m no cake decorator, so I just slathered it on with a spatula once the cupcakes were cool.
The Final Result
They turned out pretty good! A little uneven, maybe, but definitely tasty. And hey, they were homemade, with love. That’s what counts, right? Next time, I might try adding some sprinkles or maybe even get adventurous with some food coloring. I’m now ready to make my day, every day!
