Okay, so I wanted to make something sweet but not too complicated, I decided to try making almond sandwich cookies. I’ve never made them before, so it was a little bit of a baking adventure for me.
First, I gathered all the stuff I needed. I got some almond flour, regular flour, sugar, butter, eggs, and a bit of vanilla. For the filling, I just grabbed some store-bought chocolate spread because, you know, who has time to make that from scratch?

I started by mixing the dry ingredients. I dumped the almond flour, regular flour, and sugar into a big bowl and whisked them together. It was pretty easy, just making sure there were no big lumps.
Then, I added the wet stuff. I creamed the butter and sugar together in another bowl until it was all fluffy. Next, I cracked in the eggs one at a time, mixing after each one. Finally, I stirred in a splash of vanilla.
Combining Everything
Once I had both mixtures ready, I combined them. I poured the dry ingredients into the wet ingredients and mixed them until it formed a dough. It got a bit sticky, but I managed.
Next, I rolled out the dough. I sprinkled some flour on my countertop, plopped the dough on it, and rolled it out with a rolling pin. I aimed for about a quarter-inch thickness. It wasn’t perfect, but it worked.
- Cutting out the cookies was fun. I used a round cookie cutter, but honestly, any shape would do.

Baking Time
I preheated my oven to 350°F (175°C) and popped the cookies in. They baked for about 10-12 minutes. I kept an eye on them to make sure they didn’t burn. They turned a nice golden brown around the edges.
After baking, I let them cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely. This part was tough because they smelled so good!
Making the Sandwiches
Once the cookies were cool, I spread a generous amount of chocolate spread on the flat side of one cookie and topped it with another cookie. It was like making a little cookie sandwich. I repeated this until all the cookies were used up.

In the end, I had a bunch of delicious almond sandwich cookies. They were a bit crumbly but tasted amazing. The combination of the almond flavor and the chocolate spread was perfect. It was a successful first attempt, and I’ll definitely be making these again.
I guess baking doesn’t have to be super complicated to be rewarding. These cookies were pretty simple to make, and the result was totally worth it. Plus, my kitchen smelled amazing the whole time. I’d say it was a win-win situation!
