First off, you’ll need to get yourself some sweet potatoes. Not too many, though—just enough to give the bread a nice, soft texture. You want them nice and tender, so bake ‘em up or boil ‘em ‘til they’re real soft. Once they’re ready, mash ‘em up good. Don’t be shy with the mashin’—the more mashed, the smoother your bread will be. Just set ‘em aside while we work on the rest.

Now, for the miso part. If you ain’t familiar with miso, it’s a fermented paste made from soybeans. It’s got a savory, almost salty taste that’ll balance out the sweetness of those potatoes. You don’t need a whole lot, just a couple tablespoons. I like to go with the white miso ‘cause it’s a little milder, but you can use whatever kind you got. Stir it in real good with a bit of water until it’s smooth and ready to mix.

Then, you’ll want to gather your other ingredients. You’ll need some flour, sugar, and a bit of yeast to get that bread to rise nice and fluffy. Oh, and don’t forget the seeds! You can use sunflower, pumpkin, or sesame seeds—whatever you got around the house. Those seeds will give the bread a nice crunch and add a bit of flavor that’ll have folks askin’ what that special ingredient is. Mix up the flour, sugar, and yeast together in a big ol’ bowl, then add your sweet potatoes and miso paste into the mix. Stir it all up until it forms a dough.

Place it in a greased baking pan, and sprinkle those seeds on top. You can even press ‘em in a little bit so they stick. Let the dough rise again for about 30 minutes, and you’re almost there.

When it’s done, let it cool a bit before slicin’ into it. You’ll see that the bread is soft on the inside, with just the right amount of sweetness from the potatoes and that savory miso flavor peeking through. The seeds on top add a nice touch and a bit of texture, so you get a little crunch with every bite. You can eat it just as it is, or toast it up with a little butter for an extra treat.
