Okay, so I’ve been seeing these matcha lava cakes all over my feed, and I finally caved and decided to try making one myself. I’m not a pro baker or anything, so I was a little nervous, but it turned out way easier than I thought!
First, I gathered all my ingredients. You know, the usual stuff like flour, sugar, eggs. But the key here is the matcha powder, obviously. I got some good quality stuff, hoping for that vibrant green color and strong matcha flavor.

Getting Started: Melting and Mixing
- I melted some white chocolate and butter together. I just used the microwave, doing it in short bursts and stirring in between so it wouldn’t burn. It smelled so good already!
- Then, in a separate bowl, I whisked together the eggs and sugar until it was all pale and fluffy. This took a little bit of arm work, but it’s important for that light texture.
- Next, I poured the melted white chocolate mixture into the egg mixture and gently folded it all together. You don’t want to overmix it, just make sure it’s nicely combined.
- Then the matcha and mixed well.
The Final Steps: Baking and (Hopefully) Lava!
I greased and floured a couple of ramekins. This is super important so the cakes don’t stick. Then I poured the batter into the ramekins, filling them about halfway.
I popped them into a preheated oven. I think I baked them for around 12-15 minutes. You want the edges to be set, but the center should still be a little jiggly. That’s the lava part!
I let them cool for a few minutes in the ramekins, then carefully turned them out onto plates. And…success! They looked like little green volcanoes. I dusted them with a little extra matcha powder for good measure.
When I cut into it, that molten matcha center came flowing out. It was so satisfying! And the taste? Amazing. The slight bitterness of the matcha with the sweetness of the white chocolate was just perfect. Seriously, I felt like a fancy pastry chef for a minute there.
