Alright, so I decided to tackle these vanilla and chocolate sandwich cookies. I’ve seen them around, they look fancy, but I figured, “How hard could it be?” Turns out, it’s a bit of a process, but totally doable, and so worth it.

Getting Started
First, I gathered all my ingredients. I’m a big believer in having everything measured out beforehand. Makes life way easier. This recipe needs stuff for both the vanilla and the chocolate cookies, plus the filling. It’s a bit of a list, so don’t be intimidated!
Making the Dough

Once they were good and cold, I rolled them out. I aimed for about 1/4 inch thick, but honestly, I just eyeballed it. Then, I used some cookie cutters(I chose simple circle ones) and cut out my shapes.
Baking Time
Into the oven they went! I baked them at 350°F . Keep an eye on them, you want them to just be starting to turn golden brown on the edges.
The Filling

- The filling process is very simple.I mixed all ingredients together.
- If the filling is too thick, add some milk.
Assembly!
Finally, the fun part! Once the cookies were completely cool, I spread a generous amount of filling onto one cookie and sandwiched it with another. Vanilla on vanilla, chocolate on chocolate, and of course, vanilla on chocolate!
