Okay, so today I decided to tackle something I’ve seen floating around online – pudding hand pies. They looked so cute and yummy, I just had to try making them myself. Let me tell you, it was a bit of an adventure, but a fun one!
Getting Started
First, I gathered all my ingredients. I already had most of the stuff, like flour, sugar, butter, and eggs. The only thing I needed to run out for was the instant pudding mix. I chose chocolate because, well, chocolate is always a good idea, right?

The Dough Dilemma
Making the dough was the first hurdle. I followed a recipe I found, but I think my kitchen was a bit too warm, because the dough got super sticky, super fast. I added a little extra flour, bit by bit, until it felt manageable. It was still a little soft, but I decided to just go with it. I mean, worst-case scenario, I’d have some oddly shaped pies, right?
- Flour, everywhere! Seriously, I think I dusted half my kitchen in flour trying to keep that dough from sticking.
- Butter, make sure it is cold!
- I used my hands for mixing, it would be more even.
Pudding Prep
While the dough was chilling in the fridge (wrapped in like three layers of plastic wrap to prevent sticking!), I made the pudding. Easy peasy! Just whisked the pudding mix with some cold milk and let it set. I may or may not have snuck a spoonful (or two) while it was thickening. Don’t judge!
Assembly Time
This is where things got interesting. I rolled out the dough (with more flour, of course) and cut it into circles. Then, I spooned some pudding onto half of the circles and topped them with the other half. I used a fork to crimp the edges, trying to make them look all pretty like the pictures I saw. They weren’t perfect, but hey, they were homemade!
Baking and (Finally!) Tasting
Into the oven they went! I baked them until they were golden brown and the smell of warm chocolate filled my kitchen. It took everything in me not to burn my mouth trying one right away. I let them cool for a little bit, then dusted them with some powdered sugar. And… they were good! A little messy, a little rustic, but definitely delicious. The dough was flaky, and the pudding was creamy and chocolatey. Success!
So, would I make these again? Definitely! Maybe next time I’ll try a different flavor of pudding, or even add some fruit. It was a fun little baking project, and the end result was totally worth the floury mess.
