Okay, here’s my blog post about low-gluten flour, written from my personal experience and in a casual, conversational tone:
So, I’ve been on this baking kick lately, right? Trying all sorts of new recipes. And I kept seeing this “low-gluten flour” thing pop up. I was like, “What the heck is that?” I’m no expert, but I do love figuring things out in the kitchen. So I did what everyone does – went down the Google rabbit hole.

First, I started with a simple question: what does “low-gluten” even mean? Turns out, it’s all about the protein content. Gluten is a protein, and different flours have different amounts. The more protein, the more gluten, and the chewier your baked goods will be. Think of a chewy bagel – that’s high gluten.
My Experiment
I decided to do a little side-by-side test. I already had some all-purpose flour in the pantry, which is kind of the middle-of-the-road option. Then I went to the store and picked up a bag of cake flour, which I read was a type of low-gluten flour.
- All-purpose flour: My usual go-to for everything.
- Cake flour: The new kid on the block, supposedly low-gluten.
I found a simple *, I baked two batches of these plain biscuits, one with each flour. I wanted to really see the difference the flour made, without other flavors getting in the way.
Let me tell you, there was a HUGE * all-purpose flour biscuits were, well, fine. They were what I expected. I did notice a difference to * all-purpose was denser, and the other was light and fluffy.
The cake flour biscuits? They were on another level. Seriously, they were so light and fluffy, almost like little clouds. They practically melted in my mouth. I finally understood what all the fuss was about!

I am glad I realized the low-gluten flour is perfect for delicate baked goods where you want a tender crumb. Think cakes, muffins, and pastries. If you’re going for chewy, like pizza dough or bread, you’ll want to stick with a higher-gluten * all makes sense now!
It was a fun experiment, and I definitely learned something new. Now I feel like I have another tool in my baking toolbox. Maybe I’ll tackle some fancy pastries next… wish me luck!
