So, I’ve been on this whole “clean eating” kick lately, right? And it’s been, like, a journey. One thing that kept bugging me was aluminum in baking powder. It just sounded… icky. I didn’t want that in my muffins, you know?

I found a few brands that kept popping up. There was that one made with potato starch, and people said the stuff will be more fluffy.
I found a small pack of an aluminum-free baking powder. I grabbed it, feeling pretty victorious. I mean, it wasn’t as cheap as the regular stuff, but hey, my health is worth it, right?
The next day I made my muffins. I’m using the new baking powder and I will say, they are pretty good! They is fluffy and moist.
