Okay, folks, so I tried my hand at making banana bread muffins today, but with a twist – a cream cheese filling. Sounds fancy, right? But let me tell you, it was quite the adventure.
I started by gathering my ingredients. First, I mashed up some very ripe bananas. I mean, these guys were practically begging to be turned into something delicious. I used three medium-sized bananas, and they turned into about a cup and a half of mush. Perfect!

Next, I grabbed a big bowl and tossed in some melted butter, a couple of eggs, a splash of vanilla extract, and a good amount of sugar. I whisked those together until they were all nice and friendly with each other.
In another bowl, I mixed the dry stuff: flour, baking soda, a pinch of salt. You know, the usual suspects. Then, I gradually added this dry mix to the wet ingredients, stirring until just combined. Gotta be careful not to overmix, or you’ll end up with tough muffins, and nobody wants that.
Now for the fun part – the cream cheese filling! I took a block of softened cream cheese, beat it with some sugar, an egg yolk, and a little bit of vanilla until it was smooth and creamy. Easy peasy.
Then, I started assembling the muffins. I lined my muffin tin with paper liners. After that, I spooned a bit of the banana bread batter into each liner, about halfway full. Then, I added a dollop of the cream cheese filling right on top of the batter. Finally, I covered the filling with more banana bread batter, filling the liners almost to the top.
I popped the muffin tin into a preheated oven and baked them for about 20 minutes. To check if they were done, I stuck a toothpick in the center of a muffin. When it came out clean, I knew they were ready.
I let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. It was tough to resist, but I managed to wait until they weren’t piping hot before taking a bite.
The Verdict
- Appearance: Golden brown on top, with a peek of the cream cheese filling inside. Looked pretty darn good!
- Texture: Moist and fluffy, with a creamy surprise in the middle. The cream cheese filling added a nice tanginess.
- Taste: Delicious! The banana flavor was strong, and the cream cheese filling was a great complement. A little sweet, a little tangy, and a whole lot of yum.
Overall, these banana bread muffins with cream cheese filling were a hit. They were fairly easy to make, even with the added filling step. Definitely a recipe I’ll be making again!
