Today, I wanted to try out different food colorings for frosting. I’ve always loved baking, and I thought it would be fun to see which type of food coloring works best. I headed to the grocery store and picked up a few different kinds: liquid, gel, and paste. I figured these would give me a good range to experiment with.
Getting Started
First, I made a big batch of my go-to vanilla buttercream frosting. It’s a simple recipe that I’ve used a million times, so I knew it would be a good base for this test. Once the frosting was ready, I divided it into several small bowls. Each bowl was going to get a different type of food coloring.

Experimenting with Liquid Food Coloring
I started with the liquid food coloring. I added a few drops to one of the bowls and started mixing. It took quite a bit of liquid to get a noticeable color change, and even then, the color was pretty light. It was more of a pastel shade, which was nice but not very vibrant. Plus, I noticed the frosting got a little runnier as I added more liquid. I guess that makes sense, but it’s something to keep in mind.
Trying Gel Food Coloring
Next up was the gel food coloring. This stuff was way thicker than the liquid. I used a toothpick to add a tiny bit of gel to a fresh bowl of frosting. Wow, was this stuff potent! Just a little bit gave me a really vibrant color. I was impressed. The frosting’s consistency stayed pretty much the same, too, which was a big plus. This one seemed like a winner for sure.
Working with Paste Food Coloring
Finally, I tried the paste food coloring. It was similar in consistency to the gel, maybe a tad thicker. Again, I used a toothpick to add a small amount to the frosting. The color payoff was great, just like the gel. I got a deep, rich color without needing to use a lot of product. The frosting stayed thick and fluffy, which is exactly what I wanted.
My Thoughts
- Liquid food coloring gave a light, pastel color but made the frosting a bit runny.
- Gel food coloring was super vibrant and didn’t change the frosting’s texture.
- Paste food coloring was also very vibrant and kept the frosting nice and thick.
After trying all three, I think I like the gel and paste food colorings the best. They gave me the bold colors I was looking for without messing up the frosting’s consistency. The liquid one was okay for a subtle look, but it wasn’t what I was going for today. It’s good to know I have options, depending on the look I want. Overall, it was a fun experiment, and I can’t wait to use my brightly colored frostings on my next baking project!
