Okay, so I saw a bunch of people online talking about using duck eggs for baking. I got curious, so I decided to give it a shot myself. I mean, I usually just use regular chicken eggs, but why not try something new, right?
First, I went to the local farmer’s market and picked up a dozen duck eggs. They looked a bit bigger than chicken eggs and the shells were kinda different colors, which was cool. Once I got home, I decided to start simple. Brownies seemed like a good starting point. I figured, if I mess this up, at least it’ll still be chocolate, you know?

My Duck Egg Brownie Experiment
- I found a basic brownie recipe online and gathered all the ingredients. The recipe called for two chicken eggs, and I just swapped them out for two duck eggs.
- Then I whisked the duck eggs in a bowl. I noticed they were thicker and seemed to have a richer color than chicken eggs. It felt like they had more yolk to them.
- Next, I mixed the wet and dry ingredients together, just like the recipe said. The batter looked pretty normal, maybe a bit smoother. I poured it into a greased pan and stuck it in the oven.
- While it was baking, I did a bit more reading about duck eggs. Apparently, they’re good for making stuff like batters because they mix really well.
- I baked the brownies for the time the recipe suggested, and when I took them out, they smelled amazing. They looked a little different than usual, a bit denser maybe?
After they cooled down, I cut myself a piece. And let me tell you, they were good! Super rich and fudgy, even better than my usual brownies. They had this depth of flavor that I wasn’t expecting. My family loved them too. I think I might be a duck egg convert now! I’m definitely gonna try using them in other recipes, like cakes or maybe even some homemade mayo.
