Hey everyone, you won’t believe what I made in my kitchen today! I tried my hand at a matcha and red bean cake. I’ve always loved the combo of matcha and red bean, so I thought, why not put them together in a cake?
First, I gathered all the stuff I needed. I got some matcha powder, which is basically this super fine, bright green powder made from ground-up green tea leaves. It’s got this unique, kind of grassy flavor that I really dig. Then, of course, I needed red bean paste, the sweet stuff that’s usually used in Asian desserts. I also grabbed the usual cake ingredients like flour, sugar, eggs, and butter.

I started by making the cake layers. I whipped up a simple sponge cake batter and added a good amount of matcha powder to it. I love the color of the batter! After the cake baked and cooled, I whipped some cream and mixed them with red bean paste.
Next, I made the matcha mousse. I combined matcha powder with some sugar and hot water, then mixed it into whipped cream. The mousse turned out so fluffy and had that perfect light green color.
- Prepare the matcha sponge cake batter.
- Bake the sponge cake and let it cool.
- Whip up the cream with red bean paste.
- Make the matcha mousse.
Now came the fun part – assembling the cake! I carefully sliced the sponge cake into layers. Then, I spread a generous amount of the red bean cream on one layer and topped it with another layer of cake. I repeated this process, and finally, covered the whole cake with the matcha mousse. It looked so pretty, all layered up like that.
I put the cake in the fridge for a few hours to let everything set. I was so excited to try it! When I finally took a bite, oh boy, it was heavenly. The slight bitterness of the matcha balanced perfectly with the sweetness of the red bean. The sponge cake was so soft, and the mousse was just melt-in-your-mouth good.
