Okay, so I tried making those colorful sandwich cookies that are all the rage these days. You know, the ones that look like they came straight out of a cartoon? I thought it would be a fun little project, and honestly, I wanted some cute snacks for my Instagram. Let me tell you, it was a journey.
Getting Started
First, I gathered all the stuff I needed. I went to the store and bought a ton of butter, sugar, flour, and of course, food coloring. I opted for the gel kind because I heard it gives you more vibrant colors. I also grabbed some sprinkles, just in case. Back home, I laid everything out on the counter, feeling all organized and ready to go.

Mixing and Baking
I started by mixing the dry ingredients – flour, baking powder, and a pinch of salt. Then, in another bowl, I creamed together the butter and sugar until it was all fluffy. I added in the eggs one at a time, then some vanilla extract. It was all pretty standard cookie stuff so far. Next, I gradually added the dry ingredients to the wet ones, mixing until it formed a dough. It felt like playdough, which was kind of fun. I divided the dough into four parts because I wanted four different colors.
- I used red for the first one, just a few drops, and mixed it until it was all evenly colored. It looked pretty good.
- Then I did the same with yellow, blue, and green.
By the end, I had four bowls of brightly colored dough. I rolled each color into a log and wrapped them in plastic wrap. These went into the fridge for about an hour to chill. This part was a bit tedious, but the dough was too soft to work with otherwise. After they were chilled, I sliced each log into little rounds. I placed them on a baking sheet lined with parchment paper. Into the oven they went, at 350 degrees for about 10-12 minutes. I watched them like a hawk because I didn’t want them to brown too much and lose their color.
The Filling
While the cookies were baking, I whipped up some frosting. I just used a simple buttercream recipe – butter, powdered sugar, a splash of milk, and a bit of vanilla. Easy peasy. Once the cookies were out and cooled, I spread a generous amount of frosting on one cookie and sandwiched it with another. Some of them I rolled in sprinkles, just for extra flair.
The Result
The cookies turned out pretty good! They were definitely colorful, although the colors were a bit more pastel than I expected. But hey, they looked cute and tasted delicious. I even took some pictures and posted them online. They might not be perfect, but I’m pretty proud of my little colorful sandwich cookies. It was a fun experiment, and I’d definitely try it again, maybe with different color combinations next time. Who knows, maybe I’ll even try making those fancy French macarons someday!
