Okay, guys, so I saw this recipe online, it is called “Pumpkin Bread King Arthur” or something, and it looked pretty easy. I thought, why not give it a shot? My kids were all over me to help with Thanksgiving baking, so this seemed like the perfect thing.
First off, I gathered all the ingredients. I mean, who even has pumpkin spice just lying around? Luckily, I did. Flour, sugar, you know, the usual suspects. I preheated the oven to 350 degrees, like the recipe said.

Mixing Time
Then came the fun part – mixing! I dumped everything into this big bowl. Honestly, I kind of just eyeballed some of it. I used a can of pumpkin puree, not the pie filling stuff. Made that mistake once, never again.
- I added some eggs.
- I poured in some oil.
- And I sprinkled in a good amount of that pumpkin spice.
I mixed it all up with a big spoon. No fancy mixer or anything. It turned into this orange, gloopy batter. The kids loved this part. They each took turns stirring, making a huge mess, of course.
Baking Time
Next, I greased up a loaf pan. I think it was 9×5 inches, but don’t quote me on that. Poured the batter in and popped it into the oven. The recipe said to bake for like an hour, but I always check it sooner. You know how ovens are.
I set a timer for 50 minutes just to be safe. And guess what? When I stuck a toothpick in, it came out clean! It smelled amazing, by the way. All those spices and pumpkin, it made my whole house smell like fall.
Cooling and Eating
I let it cool for a bit in the pan, then I flipped it onto a wire rack. It was a little tricky, but I managed to get it out in one piece. Waited another hour for it to cool completely, which was the hardest part, if I’m being honest.
Finally, we sliced it up. Oh my gosh, it was so good! Moist, flavorful, and just the right amount of sweetness. The kids gobbled it up. They kept asking for more. My wife, she loved it too. Said it was better than any pumpkin bread she’s ever had. Score!
So yeah, that’s my pumpkin bread adventure. It was a hit! Definitely making this again. Maybe next time I’ll add some chocolate chips. Or nuts. Or both! Who knows? It’s all about experimenting, right?
