Peanut butter and jelly cupcakes, oh boy, them’s good eatin’. My grandkids, they just love ’em. Make ’em for birthdays, holidays, any day really. They ain’t hard to make neither, ‘cept my old hands get tired from all that mixin’.
Peanut Butter and Jelly Cupcakes
First, you gotta get your stuff together. Flour, sugar, that kinda thing. Butter, gotta have butter. And the peanut butter, can’t forget that! And jelly, whichever kind your heart desires. My grandkids like that grape stuff. Makes a mess, but they sure do like it.

- Flour, yeah, that’s important.
- Sugar, to make ’em sweet.
- Butter, gotta be soft, not hard as a rock.
- Eggs, from my neighbor’s chickens.
- Peanut butter, the creamy kind.
- Jelly, grape is good, or strawberry.
- Milk, makes it all mix up nice.
- Baking powder, makes ’em fluffy.
- Salt, just a pinch.
- Vanilla, for a little somethin’ extra.
You gotta mix the butter and sugar first. Beat it ’til it’s all light and fluffy, like a cloud. Then you crack them eggs in, one at a time. My neighbor, she’s got the best eggs. Big ones, too. Then you put in some flour, and some milk and you mix it all again. Don’t forget the baking powder and the salt. Just a pinch of salt. It’s like a secret, makes the sweet stuff taste even sweeter. You gotta add that vanilla in, too. Just a little bit, gives it a good smell. And mix it. Mix it good. My arm gets tired, but I keep on mixin’. Gotta get it all mixed up real good.
Then, you gotta get them little cupcake papers. I like the ones with the pretty flowers on ’em. Makes ’em look fancy. You put a spoonful of that batter in each one. Fill ’em up. Maybe a little more than half. Don’t be stingy with it! Then you get the oven hot. Gotta wait till it’s good and hot. I don’t trust them new fangled ovens with the numbers, I just know when it’s hot enough.
Baking them Cupcakes
I put them cupcakes in the oven, gotta watch ’em close. You don’t want ’em to burn. Takes about, oh, I don’t know, maybe 18 minutes or so. You can tell when they’re done. They get all golden brown on top. And you stick a toothpick in ’em, and if it comes out clean, they’re done. Like magic!
Then, the fun part. After they cool down some, you gotta put the peanut butter on. I like to use a knife. Just spread it on there, nice and thick. Then you get the jelly. I use a spoon for that. Just dollop it right on top of the peanut butter. It’s like a little surprise inside when you bite into it.
Some folks like to put fruit on top. You can do that, it’s your own business. My grandkids, they like them bananas. Sometimes they want them little strawberries. Makes it look real pretty. Me? I just like ’em plain. Peanut butter and jelly, that’s all you need. It is a good thing. It’s simple, but good.
Them peanut butter and jelly cupcakes, they’re a real treat. Reminds me of when I was a little girl. We didn’t have much, but we always had peanut butter and jelly. It was a good thing. It’s simple, but good. Now, I make these cupcakes for my grandkids. They gobble ’em up! Makes an old lady’s heart happy, it does. And they are easy, too. You can make them too.
So next time you want somethin’ sweet, try them peanut butter and jelly cupcakes. They are easy to make and you will love it. Just remember what I told ya. Butter, sugar, eggs, flour, peanut butter, jelly. That’s all you need. And a little bit of love. That’s the most important ingredient. You put a little love in everythin’ you make, and it’ll always taste good. That’s what my mama always said, and she was right.
