Butter Sandwich Cookies: Tips for Baking, Filling, and Storing Your Treats

I tell ya, these butter sandwich cookies, they ain’t nothin’ fancy, but they sure are tasty. You know, like them cookies you get at the store, but these ones, you make ’em yourself. Better that way, I always say.

Now, you wanna make these butter sandwich cookies, you gotta get some stuff. Flour, sugar, butter, the usual suspects. Oh, and some eggs. Don’t forget the eggs. And maybe a little somethin’ somethin’ for the filling, like jam or that sugary stuff, what’s it called…frosting. That’s it. Frosting.

You mix up all the dry stuff first. The flour and the sugar. Then you gotta get that butter in there. Now, that butter, you want it soft, not hard as a rock. Leave it out for a bit, you know. Let it get friendly with the room. Then, you mash it all up. Your hands are gonna get messy, but that’s the fun part, ain’t it?

Then you crack them eggs in there. One, two, maybe three, depends on how many cookies you want. Mix it all up again. Keep mixin’ till it’s all smooth, like a baby’s behind. That’s what my old man used to say.

Now, you got this dough, right? Gotta roll it out. Get some flour on the table, so it don’t stick. Roll it out, not too thin, not too thick. Then you get those cookie cutters. Stars, hearts, whatever you got. Cut ’em out.

  • Get your cookie sheet ready.
  • Put some paper on it, so they don’t stick.
  • Lay those cookies on there.
  • Don’t put ’em too close, they need room to breathe.

Then, into the oven they go. Not too hot, not too long. You gotta keep an eye on ’em. When they start to get a little brown around the edges, that’s when they’re done.

Now, here comes the fun part. You take one cookie, put some of that frosting or jam on it, and slap another cookie on top. Sandwich cookies! See? Easy peasy. You can make a whole bunch of ’em.

If you want to make the cookies softer, you can put some bread in the cookie jar. I don’t know why, but it works. Some folks, they like to scoop all the dough before they bake the cookies. I don’t do that, I just bake them as I go. Make sure your dough is stiff, that’s important. If you are using a cookie press, any stiff butter type of cookie dough will do. I don’t have one of those fancy things, I just use my hands.

These cookies, they’re good with a cup of coffee, or milk. Kids love ’em. Heck, even the old folks like ’em. They’re just good, simple cookies. Nothin’ fancy, but they hit the spot.

And the best part? You made ’em yourself. You know what’s in ’em. No funny stuff. Just good old-fashioned ingredients. That’s the way I like it.

Now, you might be thinkin’, “These cookies, they sound a lot like other cookies.” And you’d be right. There ain’t nothin’ new under the sun, as they say. But these butter sandwich cookies, they got a little somethin’ extra. Maybe it’s the love you put into ’em. Maybe it’s the way they remind you of simpler times. I don’t know. But there is somethin’ special.

So, you go on and try ’em. See for yourself. You can make different kinds of sandwich cookies, you know. You can use different fillings. Chocolate, peanut butter, whatever you like. You can even put sprinkles on top, if you want to get real fancy. I like to use strawberry jam. Reminds me of when I was a little girl. We had a strawberry patch out back.

Baking cookies, it’s a good way to spend an afternoon. Especially when it’s cold outside. The oven warms up the house, and the smell of cookies, well, there ain’t nothin’ better. It’s better than those fancy candles they sell at the store. And it is much cheaper to make butter sandwich cookies than to buy them. Plus you can make a whole bunch at once.

So, there you have it. My two cents on butter sandwich cookies. They ain’t much, but they’re somethin’. And sometimes, that’s all you need. A little somethin’ sweet to make the day a little brighter. Give it a try, you won’t regret it. These cookies, they’re easy to make, and they taste good. What more could you ask for? Now go on, get bakin’! And don’t forget the butter!
